
I just finished a great, light, delicious (and nutritious) lunch and I couldn’t wait to share it with you. (By the way, thank you for supporting me and my blog. I love getting your comments and your feedback. I wish you could all come to dinner at our house!) Anyway, back to the black beans. The first time I had black beans (which was pretty late, in my twenties) I realized that “once I went black, there was no going back.” I love them, but I don’t cook them enough because of my sort-of-picky-eater kids.
